Miso soup with tofu and wakame, rice, natto
- 1½ cups shiitake dashi (prepped)
- 6 oz super firm tofu, cubed
- 1 tsp dried wakame
- 1 tbsp white or awase miso
- 1 cup cooked jasmine rice (prepped)
- 1 natto pack, with its sauce and mustard
- 1 scallion, sliced
- Bring the dashi to a simmer. Add the tofu and wakame and simmer 3 minutes.
- Turn off the heat. Whisk the miso into a ladle of broth, then stir it back in. Don't boil after the miso goes in.
- Warm the rice. Stir the natto 30 to 40 times with its sauce until it turns stringy, then spoon it over the rice.
- Top the soup with scallion.
Swap: if natto isn't for you, pan-fry 3 oz tempeh in a little tamari instead.
